HAVE_PTHREADS define does not make in to recordingprofiles.cpp

Description

I can't figure out the proper way to make it propogate from configure, but enabling "pthreads = on" does not do it. I have to manually define it in the file so I can get the encoding threads options in recordingprofiles.

(In [10243]) Closes #1973. Fixes propagation of --enable-ffmpeg-pthreads info for compilation.

This was disabled by removal of config.h from a header included by recordingprofile.cpp, and a to a problem in ./configure which didn't set HAVE_PTHREADS properly for avlib.
